Vermicelli Idli’s! Who would have thought of making idli’s with vermicelli? May be it’s common, but I haven’t come across these before. So I when I first saw this on my FB foodie group, posted by Shobana ji who blogs at Cooking with Shobana, I knew I had to try this out immediately! Like most things that I dilly dally, in terms of trying out several of the recipes that interest me, having bookmarked like a million ( okay not million, but you get it, don’t you? ) I tried these soon enough!
The Konkan region and southern India are blessed with an abundance of jackfruits! The jackfruit has a distinct aroma and a sweet taste. It comes in 2 varieties, one is hard called kappa and the other is the soft variety called rassal. I prefer the later simply coz when it’s ripe it just melts in the mouth. A lot of people irk at the very mention of the word jackfruit, it’s not everyone’s cup of tea and it’s taste is something that has to be acquired. I’m back with another healthy, vegan & kid-friendly snack recipe – Soy and spinach croquettes! I had this large box of organic spinach that I got from Costco, I used it at least three times and yet I had about 2 cups remaining. I thought I would experiment with it in the form of croquettes. To add some volume and health quotient to it, I added Soy granules/TVP. It made for a very interesting combination, they were moist and delicate on the inside, delicious from all the seasonings with a crisp exterior, basically everything you wish for in a deep fried snack 😀 Continue reading →
I absolutely love kebabs/ croquettes as an appetizer. Also it is a great finger food for kids and adults alike.
My original plan was to make only corn kebabs like I do usually. But I happened to have some paneer , so thought of incorporating it too. These corn and paneer kebabs turned out extremely delicious , even better than the normal corn kebabs. This mixture actually mimics a non vegetarian kebab mixture, Seriously you wouldn’t know that these are vegetarian.Crisp exterior and succulent on the inside, this kebab is truly a foodie’s delight!
